Almond Flour Pancakes


I love these pancakes. They are soft, fluffy, with a great nutty flavor without being overly sweet. Top them with some fresh fruit and a drizzle of maple syrup…perfection.

I’ll be the first to admit that I could eat carbs all day every day and I don’t believe they are “bad” but I also know that I need to be mindful of my intake of them due to some health reasons. Ever since I can remember I would gladly choose savory over sweet, and these pancakes satisfy that completely, and I can drizzle on the maple syrup without having an overly sweet breakfast.

Almond Flour Pancakes (4 pancakes)

Ingredients

  • 3/4 Cup Almond Flour (not meal)
  • 2 Tablespoons Arrowroot Powder*
  • 3/4 Teaspoon Baking Powder
  • pinch (~1/8 teaspoon) kosher salt
  • 3 oz Milk (I use Almond or Coconut)
  • 1 Tablespoon Grapeseed or Avocado Oil
  • 1 Large Egg
  • 1 Tablespoon Maple Syrup + more for serving
  • 1/4-1/2 Cup Mix-Ins of Your Choice (blueberries, toasted coconut, chocolate chips, etc.) – Optional
  • *you can substitute tapioca flour/starch in equal portions if you do not have arrowroot powder

Method of Preparation

  1. In a small bowl, beat egg and set aside
  2. In a large bowl whisk almond flour, arrowroot powder, baking powder, and salt until evenly combined
  3. Make a well in center of the almond flour mixture add beaten egg, almond milk, oil, and maple syrup
  4. Stir to combine and let sit (If using mix-ins; add now, stir until combined and let sit)
  5. Meanwhile, heat a skillet over medium heat, spray surface with oil of choice
  6. Use a 1/4 measuring cup to scoop batter into heated skillet
  7. Let cook until the pancake starts to set (edges will start to become “crisp” and lightly browned) ~1-1 1/2 minutes
  8. Flip and cook on the other side until cooked through ~1/2-1 minute
  9. Remove from pan and repeat with remaining batter
  10. Serve with toppings of your choice (butter, maple syrup, fruit, yogurt)
