Cinnamon Rolls


Cinnamon rolls are holiday favorite in our house. I mean who doesn’t love warm homemade cinnamon rolls on Christmas morning? These rolls are not only gluten-free but also dairy free and low FODMAP friendly!

I’ve been testing this recipe on and off for the last year or so, making minor adjustments for our various food sensitivities. You can easily make this with dairy and brown sugar – just use the same amounts provided below.

Cinnamon Rolls (Gluten Free, Dairy Free, Low FODMAP)

Dough

  • 2 1/2 Cups Cup4Cup Gluten Free Flour (Better Batter) + more for dusting
  • 2 1/2 teaspoon instant yeast
  • 1/2 teaspoon kosher salt
  • 4 Tablespoons Earth Balance Butter Substitute – softened
  • 1 Cup Almond, Coconut, or Soy Milk – warmed
  • 1 Large Egg (room temp)
  • 1 Tablespoon Sugar
  • 1 Teaspoon Vanilla Extract

Filling

  • 1/3 Cup Sugar (white sugar for Low FODMAP
  • 1 1/2 Tablespoons Ground Cinnamon
  • 2 Tablespoons Softened Earth Balance Butter Substitute

Icing

  • 1/2 Cup Powdered Sugar
  • 1 Tablespoon Almond, Coconut, or Soy Milk

Method of Preparation

1. Prepare Dough – using a stand mixer with the paddle attachment; add flour, yeast, salt, and softened earth balance to bowl of mixer. Mix on low speed until mixture appears crumbly

2. In a medium bowl; mix together warmed milk, room temp egg, sugar, and vanilla extract. Once evenly combined, add to flour mixture

3. Mix on low speed until combined, and dough pulls away from side of bowl

4. Lightly flour a piece of parchment paper or use a silpat – and transfer dough from bowl to floured surface (or silpat)

5. In a small bowl combine sugar and cinnamon, mix well

6. Prepare a 9″ cake pan by lightly spraying bottom of pan with cooing spray, set aside

7. Roll out (or press with you hands – my method) the dough to about a 10 x 12 inch rectangle

8. Take the 2 Tablespoons of softened earth balance and evenly spread over the dough (great activity for the kids to get involved with!). Evenly distribute the cinnamon and sugar mixture over the dough

9. Roll the dough – you can do this one of two ways, depending on the size of the cinnamon rolls you want; starting at the shorter end (larger cinnamon rolls), or the longer end (smaller cinnamon rolls)

10. Cut evenly into desired number of rolls, and place in to prepared cake pan. Lightly cover with plastic wrap and let rise for 1 hour

11. Pre-heat oven to 350 degrees F

12. Once rolls have risen, bake for 25-30 minutes. Remove from oven and let cool for ~5 minutes

13. Prepare icing by combining powdered sugar and milk substitute of your choice, drizzle over top of rolls.

14. Enjoy!
